We receive a lot of ground beef in our monthly Chestnut Farms meat share. The beef itself is exceptionally tasty, but we are always looking for ways to better our burgers.
Fortunately, KO Prime’s Ken Oringer--organizer of Boston's All Star Burger Bash on February 1--was kind enough to share his top three tips for winning a patty duke-out:
- Don't over-handle ground beef; use a minimum amount of manipulation to form patties.
- Don't season beef with salt until just before grilling, but then be generous, as burgers can stand up to a lot of seasoning.
- Watch the temperature; a medium-hot grill allows better control than one that is smoking-hot.
